Join NJveg for a vegan keto potluck and game party at Laura’s!  This event will be at a private home.  NJveg members only; adults only. Helpful info from Laura for those not familiar with a keto diet, some product suggestions, a list of keto-friendly vegetables, and more info on keto diets:

  • No more than 10% of the total calories coming from *net* carbs, twice a many coming from fat as from protein. Net carbs = total carbs – fiber, sugar alcohols amd allulose grams. All that matters for keto is the net carbs. For example, a ratio of carbs to fat to protein of 10:60:30 is good. Less carbs is better, zero sugar is best. Pay attention to net carbs on the label.
  • Limited amounts of berries maybe, and NO fruit juices, particularly those “fortified” with high fructose corn syrup.
  • Avoid seed oils, prefer predominantly saturated and monounsaturated oils like olive oil, avocado oil and coconut oil. Avoid grains and most beans, except green beens and lupini beans.
  • Avoid ultra processed foods.
  • For breads, pasta, etc. If it says “keto” on it, that’s great! There are some remarkably good substitutions out there!
  • Keto-friendly veggies include: Cabbage, Broccoli, Brussels sprouts, Mustard greens, Kale, Carrots, English Cucumbers, Parsnips, Celery, Peppers, Salsify, Asparagus, Eggplant, Tomatoes, Onions (not Vidalia – too much sugar), Green beans, Lupini beans, Lentils (they are a Resistant Starch), Pecans
  • No: sweeteners of any kind (except 0-carb), grains (pasta, rice, wheat, etc), beans, only very low carb/low sugar fruits (berries) and low carb veggies like leafy greens, English cukes, zucchini, yellow summer squash (no starchy root veggies like carrots, potatoes, yams, winter squashes, etc). Good Oils: olive and coconut, but go easy on seed oils and Look for 0-net-carb tofus like “House Foods” organic extra-firm tofu.
  • A few keto-friendly mock meats products are It’s Skinny” pastas and rice (made from konjac), zoodles, Aviate lupini bean pastas and rice, Daring Original Plant Chicken (green package), Morning Star Farms Grillers Crumbles
